Penne pasta with tomato and anchovies

The thing I love about pasta is you can make delicious, tasty dishes quickly and with just a few ingredients . . . Just like this one 🙂

1 garlic clove, crushed
1 red chilli, finely chopped
4 anchovies
10 cherry tomatoes, chopped
50ml passatta
small handful of flat-leaf parsley leaves
150g dried penne pasta
grated Pecorino
olive oil

(1). Put a pan of water on to boil. once boiling put a couple of pinches of salt into your boiling water and add the penne to cook.
(2). Add a good glug of olive oil to a frying pan over a medium heat, then add the anchovies, garlic and chilli, cook and stir for a couple of minutes , till the anchovies begin to dissolve, then add the tomatoes and passatta. Stir for a couple of minutes and let cook till your penne is ready.

(3). Once your pasta is cooked, add it to the pan along with the parsley leaves. Stir or toss for a minute or two to coat the pasta.

(4). Serve right away topped with grated Pecorino.
